Chilli

A warming, protein-packed chilli made with turkey, cbeef or plant-based mince, black beans and veg, simmered in a rich tomato sauce with warm spices. Weeknight-easy and meal-prep friendly.

Ingredients

  • 500g turkey, beef, or plant-based mince
  • 1 packet microwave rice (e.g., Tilda)
  • ½ tin black beans
  • 1 tin chopped tomatoes
  • 1 garlic clove
  • Handful of onions, mushrooms, red pepper, and tomatoes, diced
  • Chilli spice mix: 1 tbsp chilli powder, 1 tsp ground cumin, ground coriander, paprika
  • Oil for cooking
  • Method

    1. Heat oil in a pan; add the onions. After a few minutes, add the garlic.
    2. Add the chilli spice mix and stir.
    3. Add the rest of the veg (mushrooms, red pepper, tomatoes) and cook for a few minutes.
    4. Pour in the chopped tomatoes and a cup of hot water; stir.
    5. Bring to a boil, then add the mince and black beans.
    6. Simmer for ~30 minutes until it thickens.
    7. Heat the microwave rice according to the packet and serve.
