Satay

A delicious, protein-packed dish featuring tender chicken or crispy tofu coated in a creamy, spicy peanut sauce. Quick to prepare and bursting with flavor, it’s perfect for weeknight dinners, meal prep, or as a savory starter at gatherings.

Ingredients

  • 2 Chicken Breasts or 200g Firm Tofu
  • ½ tsp Chilli Flakes
  • 1 tsp Fish Sauce (or soy sauce if vegetarian)
  • Juice of 1 Lime
  • 1 Garlic Clove
  • 4 Spring Onions
  • 2 tbsp Peanut Butter
  • 2 tbsp Soy Sauce
  • 50 ml Water
  • Salt & Pepper (to taste)
  • Oil for cooking

Method

  1. Prep the Protein
    • Chicken: Dice into bite-sized pieces and season with salt and pepper.
    • Tofu: Press, pat dry, and cut into cubes. Season lightly.
  2. Make the Satay Sauce — In a blender, combine chilli flakes, fish sauce (or soy sauce), lime juice, garlic, spring onions, peanut butter, soy sauce, and water. Blend until smooth.
  3. Cook the Protein
    • Heat oil in a pan over medium-high heat.
    • Cook chicken until golden and fully cooked — or pan-fry tofu until all sides are crispy and golden.
  4. Add the Sauce — Pour half the sauce into the pan with the cooked protein. Stir to coat and heat through for 1–2 minutes.
  5. Serve — Drizzle the remaining sauce over the top when serving. Garnish with chopped spring onions or peanuts for extra crunch.
